  • 1 cup quinoa, uncooked
  • 1 lb boneless, skinless chicken breast
  • 2 bell peppers (any color), chopped
  • 1 large zucchini, sliced
  • 1 head broccoli, chopped into florets
  • 1 cup plain Greek yogurt
  • 1 cup mixed fresh berries
  • 1/2 cup hummus
  • 2 large carrots, cut into sticks
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Quinoa & Chicken Veggie Bowl

Cook the quinoa according to package instructions. While the quinoa is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breast with salt and pepper, then cook for 5-7 minutes per side until cooked through. Remove the chicken and let it rest. In the same skillet, add the remaining olive oil, bell peppers, zucchini, and broccoli. Sauté for 5-7 minutes until tender-crisp.
