  • 1 teaspoon baking soda

  • 1 ½ cups granulated sugar

  • 2 teaspoons pure vanilla extract
  • ¼ cup granulated sugar, for rolling (optional)

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the all-purpose flour, baking soda, and baking powder.

  • In a separate large bowl, using an electric mixer, beat the softened unsalted butter and granulated sugar together until the mixture is light and fluffy, which should take about 2-3 minutes.
