- 2 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 cup (2 sticks) unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- ¼ cup granulated sugar, for rolling (optional)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the all-purpose flour, baking soda, and baking powder.

- In a separate large bowl, using an electric mixer, beat the softened unsalted butter and granulated sugar together until the mixture is light and fluffy, which should take about 2-3 minutes.

- Add the egg and pure vanilla extract to the butter and sugar mixture. Continue to beat until everything is well combined.

- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix the dough.

- Roll the dough into 1.5-inch balls. If desired, roll the balls of dough in the extra ¼ cup of granulated sugar for a sparkly finish.

- Place the cookie dough balls onto the prepared baking sheet, leaving about 2 inches of space between each one to allow for spreading.
