For the Dough:

  • 1 cup whole milk, warmed to about 110°F (43°C)
  • 2 ¼ teaspoons (1 packet) active dry yeast
  • ¼ cup granulated sugar
  • 1 large egg, at room temperature
  • ¼ cup unsalted butter, melted
  • 3 cups all-purpose flour, plus more for dusting
  • ½ teaspoon salt

For the Filling:

  • ½ cup unsalted butter, softened
  • ¾ cup packed light brown sugar
  • 2 tablespoons ground cinnamon

For the Cream Cheese Icing:

  • 4 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 cup confectioners' sugar
  • ½ teaspoon vanilla extract
  • 1-2 tablespoons milk, as needed

Instructions

  • Activate the Yeast: In a large bowl, combine the warm milk and granulated sugar. Sprinkle the yeast over the top and let it sit for 5-10 minutes, until it becomes foamy. This shows the yeast is active.

  • Mix the Dough: Add the melted butter and egg to the yeast mixture and whisk to combine. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing with a wooden spoon or a stand mixer fitted with a dough hook until a soft dough forms.

  • Knead and First Rise: Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
