  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef (80/20 or 85/15 recommended)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (or more, to taste)
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1 cup beef broth
  • Salt and freshly ground black pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, chopped fresh cilantro, sliced jalapeños, tortilla chips

  • Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chopped onion and bell pepper and cook until softened, about 5-7 minutes.
