For the Meatballs:

  • 1 lb ground beef (80/20 recommended)
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup milk (any kind)
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/4 tsp red pepper flakes (optional, for a kick)

For the Sauce:

  • 1 tbsp olive oil
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 1/2 cup water or beef broth
  • 1 tsp dried Italian seasoning
  • 1/2 tsp sugar (to cut acidity)
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

  • In a large bowl, combine the ground beef, Panko breadcrumbs, milk, egg, minced garlic, Parmesan cheese, chopped parsley, salt, pepper, onion powder, and red pepper flakes (if using). Mix gently with your hands until just combined – be careful not to overmix!

  • Roll the mixture into golf-ball-sized meatballs, about 1.5-2 inches in diameter. You should get about 18-20 meatballs.

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.

  • Stir in the crushed tomatoes, water or beef broth, Italian seasoning, and sugar. Bring the sauce to a gentle simmer.

  • Carefully add the meatballs to the simmering sauce. Make sure they are mostly submerged. Reduce heat to low, cover, and let simmer for at least 30-40 minutes, or up to an hour, stirring occasionally, until the meatballs are cooked through and tender.

  • Season the sauce with additional salt and pepper to taste. Serve hot over your favorite pasta, polenta, or even in a sub roll! Garnish with fresh basil, if desired.
